I used this recipe:
The first batch I used smaller chocolate chips and store bought cashew butter and coconut sugar. I was like wow, I couldn’t believe how good they came out. All the chocolate chips that I used were soy free.
The 2nd batch, I made my cashew butter using this recipe, I just made nut butter without soaking the cashews for this batch. It’s really up to you whether you want to soak them or not. I also used maple syrup instead of coconut sugar.
These were so good, then I tried two batches with soaked cashews, made cashew butter out of them and made lemon cookies and pumpkin cookies
These were both good too but to compare, soaked or not soaked, the not soaked were way better and the commercial bought cashew butter made the texture close to chocolate chip cookies made with wheat.
Soaked cashew butter made the lemon cookies and pumpkin cookies soft, spongy but the non soaked made them crisp, they were all yummy. Is it more healthy to make your own cashew butter? It’s really a matter of taste and time, what you like. I like my cookies crispy and the same texture as cookies made with wheat.
Once you get the batter down, the way you like it, then try experimenting with different flavors like lemon cookies, pumpkin cookies etc etc.
